There’s more to a good restaurant or hotel than meets the eye. As one of the leading hotel schools in the world, Ecole hôtelière de Lausanne (EHL) is no stranger to the hard work, detail and perfectionism that goes on behind the closed doors of premium hospitality experiences. To inaugurate their new outpost, EHL invited Youri Sawerschel to give a 1-week masterclass on successful hospitality from a branding perspective.
An expert in crafting exceptional hospitality brands, Youri detailed a tried-and-true approach to designing hospitality concepts via talks, exercises and a group project over the last week in April. Summarised in a handbook created in collaboration with EHL, the programme covered everything from interpreting market trends to devising compelling storylines to successfully putting concepts into practice. Alongside the lessons, participants were also taken through a selection of exclusive case studies specific to European and Asian markets and heard from leaders within the industry. Guest speakers included Sabine Herzog, Senior Manager of Brand F&B Development for APAC Hilton, Loh Lik Peng, Founder and Director of Unlisted Collection, and Federico Folcia, Founder of Crane.
The week culminated with participants presenting their own hospitality concept for the campus in groups. Each group was given extensive feedback and encouragement. After all, as the world begins to open up again, there has never been a better time to learn the ins and outs of a great hotel concept.
